Quick Mango-Cucumber Chaat
2 cups peeled, pitted, and diced ripe mango
1 small hot-house cucumber, peeled seeded, and diced
1 fresh green jalapeno chili, stemmed and chopped
2 teaspoons grated fresh ginger
1/4 cup coarsely chopped cilantro sprigs
1 tablespoon light-brown sugar
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Juice of 1 lime
In a bowl, combine the diced mango, cucumber, chili, ginger, and cilantro and toss lightly to combine. Sprinkle the sugar, salt and pepper over the mixture and toss again. Drizzle the lime juice over the mixture and stir gently, Let stand at room temperature for 30 minutes before serving. Stir again just before serving. Refrigerate any leftovers.
